Homefed Friday: Island BBQ Sauce

Use our Island BBQ sauce on chicken, pork, shrimp, or burgers. We recently used it in our favorite turkey meatloaf recipe (note: replace the ketchup with Island BBQ sauce) and served it with these yummy herb buttered mixed roasted potatoes. Island BBQ sauce is so easy to make and it’s a delicious replacement for most recipes that call for ketchup. This will be your new favorite “go to” sauce – you’re going to want to double or triple this recipe!

Ingredients 

  • 2 tsp avocado oil or grapeseed oil  
  • 1 medium onion, diced 
  • 1 can of Island Coastal Lager or Island Southern Peach 
  • 1/4 cup brown sugar 
  • 3/4 cup organic ketchup (or a ketchup with less sugar) 
  • 1 tbsp apple cider vinegar 
  • 3 tbsp honey 
  • 1 tsp cumin 
  • 2 tsp garlic powder 
  • 1 tsp black pepper 

Instructions 

Sauté the diced onion in 2 tsp of oil in a saucepan over medium heat, about 3-4 mins. Once the onion pieces soften, deglaze with a few splashes of beer, wait 30 seconds and add the rest of the beer; simmer until reduced by half. 

Lower the heat to medium-low. Add the brown sugar, ketchup, apple cider vinegar, honey, cumin, garlic powder and black pepper and stir to mix well together. Simmer to reduce. Once the mixture has thickened (typically takes 15-20 minutes), remove it from the heat and let cool.  

Transfer sauce to a food processor or use an immersion blender to blend the sauce to a smooth consistency. Season with salt and pepper. The sauce will keep well in a container in the refrigerator for up to 2 weeks.
